Switch to New Reflow Oven

We are going to buy a new reflow oven this spring. It will replace one that is currently on-line. I have a small handful of golden boards wired with thermocouples and a ton of data to support the transfer of those specific builds. The hurdle is that many of our profiles do not own golden units or the data that goes with it so I will need to record these and create recipes on the new oven to match profiles. Should I build a thermocouple fixture for this or is there a robust gadget that can be used with a mole to help ease the transition? Any fixture design advice or other advice that can be offered to make this transition smooth for me would be greatly appreciated.
