Is there any criteria or limitations for SMT pcba's? We have boards in stock that we built and a customer wants to know what our procedure is for "storing" these boards which will have a few through-hole modules soldered to them after they get pulled from stock. Is there a time limitation for solderability providing the boards have been stored within temp and humidity parameters, dust and ESD?

There is no standard. On the web, you can find shelf life estimates for various types of solderability protection on bare boards. These estimates won't translate directly to the storage of assembled boards, because assembled boards [and the solderability protection on them] 'see' thermal cycles beyond those that bare boards see.
